Description

A quick and easy chicken zucchini stir fry that combines tender chicken and vibrant zucchini with a savory soy sauce finish.


Ingredients

  • 1 lb chicken breast, diced (boneless, skinless)
  • 2 medium zucchini, sliced (about 1/4-inch thick)
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce
  • Salt and pepper to taste
  • Optional: red pepper flakes for heat

Instructions

  1. Pat the chicken pieces dry and season lightly with salt and pepper.
  2. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat until shimmering.
  3. Add the diced chicken in a single layer. Cook until well browned on one side, about 3 minutes. Stir and cook until fully cooked through, about 2–4 more minutes. Remove chicken to a plate.
  4. Reduce heat to medium. Add the minced garlic and stir for 10–15 seconds until fragrant.
  5. Add the sliced zucchini and a pinch of salt. Stir-fry for 3–4 minutes until tender-crisp.
  6. Return the chicken to the pan. Stir in 2 tablespoons soy sauce and add red pepper flakes if using. Toss to coat and cook 1–2 minutes.
  7. Taste and adjust seasoning with soy sauce or pepper. Serve hot.

Notes

For gluten-free, use tamari instead of soy sauce. You can also swap chicken breast for thighs for juicier meat.
