  • 8 oz mushrooms, chopped
  • 4 oz prosciutto, sliced thin
  • 1 package puff pastry (2 sheets)
  • 1 onion, finely diced
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet, heat a bit of oil over medium heat. Sauté the diced onion and minced garlic until fragrant, about 2 minutes.
  3. Add the chopped mushrooms to the skillet and cook until they’re soft, approximately 5 minutes.
  4. Mix in the cubed chicken and prosciutto, seasoning with salt and pepper. Cook for an additional 5 minutes, until the chicken is no longer pink.
  5. Roll out the puff pastry on a floured surface to prevent sticking.
  6. Spoon the chicken mixture into the center of the pastry, ensuring it’s not overly full to avoid spills.
  7. Fold the pastry over the filling and pinch the edges to seal.
  8. Brush the top with beaten egg to create a beautiful golden crust.
  9. Place the pastry-wrapped chicken on a baking sheet and bake for 25-30 minutes or until golden brown and flaky.
  10. Allow it to cool for a few minutes before slicing to serve.

Notes

To keep the pastry from getting soggy, drain any excess moisture from the filling before wrapping.
