Description
Comforting Italian-American dish featuring chicken thighs, spicy sausage, and bell peppers in a tangy vinegar sauce.
Ingredients
Scale
- 4 chicken thighs (bone-in, skin-on for best flavor)
- 4 spicy Italian sausage links
- 2 sweet bell peppers (red or yellow), sliced
- 1 onion, sliced
- 4 cloves garlic, minced
- 1/2 cup white vinegar
- 2 tablespoons olive oil
- Salt and pepper, to taste
- Fresh parsley, for garnish
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Season the chicken thighs with salt and pepper.
- Add the chicken to the skillet, cooking until browned on both sides, about 5-7 minutes. Remove chicken and set aside.
- Add the sausage links and cook until browned, around 5 minutes.
- Include the sliced peppers, onion, and minced garlic, sautéing until softened, about 4-5 minutes.
- Deglaze the pan with white vinegar, scraping up the browned bits.
- Return the chicken to the pan, cover, and let simmer for about 30 minutes or until cooked through.
- Garnish with fresh parsley before serving.
Notes
Feel free to swap spicy sausage for mild options or different bell pepper colors.
