  • 1 1/2 cups shredded cheddar cheese

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and cut the baby potatoes in half or quarters.
  3. Slice the smoked sausage into 1/4-inch thick rounds.
  4. In a small bowl, mix ranch seasoning, garlic powder, onion powder, and black pepper.
  5. In a large bowl, drizzle the potatoes with olive oil and sprinkle half of the ranch seasoning mix over them; toss to coat.
  6. Line a baking sheet with parchment paper or grease lightly.
  7. Spread the seasoned potatoes in a single layer on the baking sheet.
  8. Scatter the sliced smoked sausage over the potatoes.
  9. Bake for 35-40 minutes until potatoes are golden and tender, stirring halfway through.
  10. Remove from oven, sprinkle cheddar cheese over the dish, and return to the oven for 5 more minutes until melted.
  11. Garnish with chopped parsley and serve hot with sour cream if desired.

Notes
