- 1 pound smoked sausage (halal-certified, no pork)
- 4 cups baby potatoes, halved or quartered
- 2 tablespoons olive oil
- 1 packet ranch seasoning mix (halal-certified)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon black pepper
- 1 1/2 cups shredded cheddar cheese
- 1/2 cup sour cream (optional, for serving)
- Fresh parsley, chopped (optional, for garnish)
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and cut the baby potatoes in half or quarters.
- Slice the smoked sausage into 1/4-inch thick rounds.
- In a small bowl, mix ranch seasoning, garlic powder, onion powder, and black pepper.
- In a large bowl, drizzle the potatoes with olive oil and sprinkle half of the ranch seasoning mix over them; toss to coat.
- Line a baking sheet with parchment paper or grease lightly.
- Spread the seasoned potatoes in a single layer on the baking sheet.
- Scatter the sliced smoked sausage over the potatoes.
- Bake for 35-40 minutes until potatoes are golden and tender, stirring halfway through.
- Remove from oven, sprinkle cheddar cheese over the dish, and return to the oven for 5 more minutes until melted.
- Garnish with chopped parsley and serve hot with sour cream if desired.
Notes
For a unique flavor, experiment with different cheeses or swap out smoked sausage for chicken or turkey sausage. To store leftovers, refrigerate for up to 3 days or freeze for up to 2 months.
