Instructions
- Heat olive oil or butter in a large skillet over medium heat.
- Add diced potatoes and cook until golden brown and crispy, about 10-15 minutes.
- In a bowl, crack the eggs and beat them with salt and pepper.
- Push the potatoes to one side of the skillet and pour the eggs onto the other side. Scramble until fluffy and mix with the potatoes.
