Ingredients

- 1 cup cottage cheese
- 6 eggs
- 1 cup shredded cheese (cheddar or your choice)
- 1/2 cup diced vegetables (spinach, bell peppers, onions, etc.)
- Salt and pepper to taste
- Cooking spray or oil for greasing the muffin tin
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, whisk the eggs and cottage cheese together until nicely blended.
- Stir in the shredded cheese, your chosen diced vegetables, and season with salt and pepper.
- Lightly grease a muffin tin with cooking spray or oil.
- Pour the egg mixture into each muffin cup, filling them about 3/4 full.
- Bake in the preheated oven for 20-25 minutes or until the bites are set and lightly golden on top.
- Allow them to cool for a few minutes before carefully removing them from the muffin tin.
- Enjoy immediately, or store for meal prep!
Notes
Store leftovers in an airtight container in the refrigerator for up to 4 days or freeze for up to three months.
