- 1 cup mushrooms, chopped
- 4 tablespoons butter
- 3 cloves garlic, minced
- 1 cup shredded cheese (mozzarella or cheddar)
- Salt and pepper to taste
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, melt 2 tablespoons of butter over medium heat. Add the chopped mushrooms and garlic, sautéing until the mushrooms soften. Season with salt, pepper, thyme, and oregano.
- In a mixing bowl, combine the sautéed mushrooms with the shredded cheese.
- Carefully cut a pocket into each chicken breast, ensuring you don’t slice all the way through, and stuff them with the mushroom and cheese mixture.
- In the same skillet, melt the remaining butter and sear the stuffed chicken breasts, browning them on both sides for about 3-4 minutes each.
- Transfer the chicken to a baking dish and sprinkle any remaining cheese on top.
- Bake in the preheated oven for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
- Serve hot and enjoy every cheesy, garlicky bite!
