- 1 lb boneless, skinless chicken breasts (cubed)
- 3 tbsp butter
- 3 garlic cloves (minced)
- 12 oz bowtie pasta (farfalle)
- 1 cup heavy cream
- 1 ½ cups freshly grated mozzarella
- ½ cup Parmesan (optional)
- 2 tbsp olive oil
- Salt & pepper to taste
- Fresh parsley or basil for garnish
Instructions
- Prepare the chicken: Season the cubed chicken with salt, pepper, and paprika. Heat olive oil in a skillet over medium heat and sear the chicken until golden, about 5-7 minutes. Remove and set aside.
- Make the garlic butter base: In the same skillet, melt butter and sauté the minced garlic until fragrant and golden.
- Cook the pasta: In boiling salted water, cook the bowtie pasta until al dente. Reserve ½ cup of pasta water, then drain.
- Create the mozzarella cream sauce: Add heavy cream to the garlic butter and simmer. Gradually whisk in mozzarella until the sauce is creamy. Use reserved pasta water to adjust thickness if needed.
- Toss everything: Add the chicken and drained pasta to the sauce, tossing to coat. Garnish with fresh parsley or basil and serve immediately.
Notes
You can substitute chicken with shrimp or grilled vegetables for a vegetarian option. For a lighter sauce, use half-and-half instead of heavy cream.
