  • 12 oz rotini pasta

  • 2 tablespoons Cajun seasoning

  • 1/2 teaspoon onion powder
  • Salt and pepper, to taste
  • 4 cloves garlic, minced
  • 1 tablespoon butter
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 cup mozzarella, shredded
  • 1/2 cup Parmesan, grated
  • 1/2 cup cheddar, shredded
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Cut chicken into bite-sized chunks and pat dry. Toss with Cajun seasoning, garlic powder, onion powder, salt, and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken and sear until golden, about 4–6 minutes. Remove and set aside.
  3. In a pot of boiling salted water, cook rotini for 1–2 minutes less than package directions. Drain and set aside.
  4. In the same skillet, reduce heat to medium and melt butter. Add minced garlic and cook until fragrant.
  5. Pour in chicken broth and heavy cream; bring to a gentle simmer.
  6. Stir in mozzarella, Parmesan, and cheddar until smooth. Taste and adjust seasoning.
  7. Return chicken and rotini to the skillet, tossing gently to coat. Simmer for 2–3 minutes until sauce thickens.
  8. Sprinkle with chopped parsley and serve hot.

Notes

For a lower-carb option, replace pasta with zucchini noodles. Use freshly grated Parmesan for better melting and flavor.
