Description
A quick and flavorful one-pan pasta dish featuring creamy cheese, bold Cajun heat, and tender chicken, perfect for cozy weeknight dinners.
Ingredients
Scale
- 1 pound boneless skinless chicken breasts, cut into bite-sized chunks
- 12 oz rotini pasta
- 2 tablespoons olive oil
- 2 tablespoons Cajun seasoning
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper, to taste
- 4 cloves garlic, minced
- 1 tablespoon butter
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1 cup mozzarella, shredded
- 1/2 cup Parmesan, grated
- 1/2 cup cheddar, shredded
- 1/4 cup fresh parsley, chopped
Instructions
- Cut chicken into bite-sized chunks and pat dry. Toss with Cajun seasoning, garlic powder, onion powder, salt, and pepper.
- Heat olive oil in a large skillet over medium-high heat. Add chicken and sear until golden, about 4–6 minutes. Remove and set aside.
- In a pot of boiling salted water, cook rotini for 1–2 minutes less than package directions. Drain and set aside.
- In the same skillet, reduce heat to medium and melt butter. Add minced garlic and cook until fragrant.
- Pour in chicken broth and heavy cream; bring to a gentle simmer.
- Stir in mozzarella, Parmesan, and cheddar until smooth. Taste and adjust seasoning.
- Return chicken and rotini to the skillet, tossing gently to coat. Simmer for 2–3 minutes until sauce thickens.
- Sprinkle with chopped parsley and serve hot.
Notes
For a lower-carb option, replace pasta with zucchini noodles. Use freshly grated Parmesan for better melting and flavor.
