- 1 lb ground beef
- 1 can (15 oz) black beans, rinsed and drained
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 1 package (1 oz) taco seasoning
- 2 cups shredded cheddar cheese
- 1 cup salsa
- 1 package (8 oz) tortilla chips
Instructions
- Preheat your oven to 350°F (175°C).
- Brown the ground beef over medium heat in a large skillet, breaking it into crumbles until fully cooked. Drain excess fat if needed.
- Stir in the black beans, corn, diced tomatoes, and taco seasoning. Cook for about 5 minutes, letting the flavors meld.
- Layer half of the tortilla chips in a large casserole dish, then half of the meat mixture, half of the salsa, and half of the cheddar cheese.
- Repeat the layering with the remaining ingredients.
- Cover the dish with aluminum foil and bake for 20 minutes.
- After 20 minutes, remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
- Serve hot and enjoy!
Notes
Top with sour cream or guacamole for added richness. Fresh cilantro or green onions add a nice touch.
