  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 package (1 oz) taco seasoning
  • 2 cups shredded cheddar cheese
  • 1 cup salsa
  • 1 package (8 oz) tortilla chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Brown the ground beef over medium heat in a large skillet, breaking it into crumbles until fully cooked. Drain excess fat if needed.
  3. Stir in the black beans, corn, diced tomatoes, and taco seasoning. Cook for about 5 minutes, letting the flavors meld.
  4. Layer half of the tortilla chips in a large casserole dish, then half of the meat mixture, half of the salsa, and half of the cheddar cheese.
  5. Repeat the layering with the remaining ingredients.
  6. Cover the dish with aluminum foil and bake for 20 minutes.
  7. After 20 minutes, remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
  8. Serve hot and enjoy!

Notes

Top with sour cream or guacamole for added richness. Fresh cilantro or green onions add a nice touch.
