Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan.
- Whisk together flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg in a large bowl.
- Mix the oil, melted butter, and eggs in another bowl.
- Combine the wet ingredients into the dry ingredients, stirring until just combined.
- Fold in grated carrots and nuts if using, giving the batter a light stir.
- Pour the batter into your prepared baking pan, spreading it out evenly.
- Bake for approximately 25-30 minutes, or until a toothpick comes out clean.
- Beat the cream cheese, powdered sugar, and vanilla extract to make the frosting.
