- 1 onion, diced

- 1 bell pepper, diced
- 1 can diced tomatoes
- 2 tbsp Cajun seasoning
- 1 tbsp Worcestershire sauce
- Salt and pepper to taste
- 1 cup cheddar cheese, shredded
- 4 brioche buns
- 1 tbsp olive oil
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the onion, garlic, and bell pepper. Sauté until softened, about 5 minutes.
- Stir in the ground chicken. Cook until browned, approximately 6-8 minutes.
- Incorporate the diced tomatoes, Cajun seasoning, Worcestershire sauce, salt, and pepper. Let the mixture simmer for about 10 minutes until it thickens slightly.
- Melt the cheddar cheese in a small pot over low heat, stirring until smooth.
- Toast the brioche buns until golden brown.
- Assemble your sloppy joes: Spoon the chicken mixture onto the bottom half of each bun, drizzle the melted cheddar cheese on top, and close with the top half. Serve hot.
Notes
For a spicier version, add diced jalapeños. Use ground turkey for a leaner option.
