Description

Delicious pretzel bombs filled with tender brisket and creamy beer cheese, perfect for gatherings and game days.

Ingredients

Scale
  • 3 lb Beef Brisket
  • 1 tbsp Olive Oil
  • 1 tbsp Smoked Paprika
  • 1 tbsp Garlic Powder
  • 1 tbsp Onion Powder
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 1 cup Beef Broth
  • 1 cup Shredded Cheddar Cheese
  • 1/2 cup Shredded Monterey Jack Cheese
  • 1/2 cup Beer (IPA or Stout)
  • 1/4 cup Sour Cream
  • 1 tbsp Dijon Mustard
  • 1 tsp Worcestershire Sauce
  • 1 lb Refrigerated Pizza Dough
  • Coarse Salt

Instructions

  1. Prepare the brisket: In a slow cooker, add the brisket and drizzle with olive oil. Rub the brisket with smoked paprika, garlic powder, onion powder, salt, and pepper. Pour in the beef broth. Cover and cook on low for about 480 minutes, or until the meat is fork-tender.
  2. Make the beer cheese sauce: In a saucepan over medium heat, combine shredded cheddar, Monterey Jack, and beer. Stir continuously until the cheese melts smoothly. Add sour cream, Dijon mustard, and Worcestershire sauce, mixing to combine. Remove from heat.
  3. Shred the brisket: Once the brisket is cooked, remove it from the slow cooker and shred it using two forks. Stir the shredded brisket into the beer cheese sauce to create a filling.
  4. Assemble the pretzel bombs: Preheat your oven to 400°F (200°C). Roll out the pizza dough and cut it into 12 equal squares. Place a spoonful of brisket and cheese filling in the center of each square. Gather the corners of the dough and pinch to seal.
  5. Bake: Place the stuffed parcels seam-side down on a greased baking sheet. Sprinkle with coarse salt. Bake for 15-20 minutes or until the dough is golden brown.
  6. Serve: Allow cooling slightly before serving. For extra enjoyment, serve them with mustard or your favorite dipping sauce.

Notes

For a fun twist, try different cheeses or add jalapeños for a spicy kick.
