Instructions
- Preheat your mini muffin tin and lightly grease each cup.
- In a medium bowl, combine flour, sugar, baking powder, and salt, whisking until evenly mixed.
- In another bowl, blend the milk, egg, melted butter, and vanilla extract until smooth.
- Pour the wet mixture into the dry ingredients. Stir gently until just incorporated.
- Fill each muffin cup about three-quarters full with the batter.
- Bake in a preheated oven at 350°F (175°C) for 12-15 minutes, or until golden brown and cooked through.
- Allow to cool slightly before serving. Drizzle with syrup or dust with powdered sugar if desired.
Notes
For a dairy-free option, substitute almond milk for regular milk. Use whole wheat flour for a healthier version. To achieve the fluffiest poppers, avoid overmixing the batter.
