- 4 ripe bananas (about 1 ½ cups mashed)
- 1 cup all-purpose flour
- ¾ cup granulated sugar
- 1 tsp baking soda
- ¼ tsp salt
- 2 large eggs
- ½ cup unsalted butter (melted)
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- Mash the ripe bananas in a mixing bowl until smooth but still chunky.
- Mix in the melted butter; then add the eggs one at a time, followed by the vanilla extract, stirring well.
- In a separate bowl, whisk together the flour, sugar, baking soda, and salt. Gradually fold this dry mixture into the wet ingredients until just combined—don’t overmix!
- Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
- Bake for 60 minutes or until a toothpick inserted into the center comes out clean.
- Let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
For added flavor, try incorporating a teaspoon of cinnamon or chocolate chips. Store leftovers in an airtight container for up to three days, or freeze individual slices.
