Description

A moist and flavorful banana bread that’s perfect for breakfast, snacks, or brunch, utilizing overripe bananas for a delicious treat.

Ingredients

Scale
  • 4 ripe bananas (about 1 ½ cups mashed)
  • 1 cup all-purpose flour
  • ¾ cup granulated sugar
  • 1 tsp baking soda
  • ¼ tsp salt
  • 2 large eggs
  • ½ cup unsalted butter (melted)
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. Mash the ripe bananas in a mixing bowl until smooth but still chunky.
  3. Mix in the melted butter; then add the eggs one at a time, followed by the vanilla extract, stirring well.
  4. In a separate bowl, whisk together the flour, sugar, baking soda, and salt. Gradually fold this dry mixture into the wet ingredients until just combined—don’t overmix!
  5. Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
  6. Bake for 60 minutes or until a toothpick inserted into the center comes out clean.
  7. Let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

For added flavor, try incorporating a teaspoon of cinnamon or chocolate chips. Store leftovers in an airtight container for up to three days, or freeze individual slices.
