Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix the mashed bananas, melted butter, buttermilk, and vanilla extract until well-combined.
  3. In another bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  4. Gradually stir the dry ingredients into the banana mixture until just combined. If you’re adding walnuts or chocolate chips, fold them in gently at this stage.
  5. Turn the dough out onto a floured surface. Knead gently a few times, then pat it into a circle about an inch thick.
