- 2 ripe bananas, mashed
- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 cup unsalted butter, melted
- 1/2 cup buttermilk
- 1 teaspoon vanilla extract
- 1/2 cup chopped walnuts (optional)
- 1/4 cup chocolate chips (optional)
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, mix the mashed bananas, melted butter, buttermilk, and vanilla extract until well-combined.
- In another bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- Gradually stir the dry ingredients into the banana mixture until just combined. If you’re adding walnuts or chocolate chips, fold them in gently at this stage.
- Turn the dough out onto a floured surface. Knead gently a few times, then pat it into a circle about an inch thick.
- Cut the dough into wedges and transfer them to your prepared baking sheet.
- Bake for 15-20 minutes or until the edges are golden brown.
- Let them cool slightly before enjoying.
Notes
For extra flaky scones, chill the dough for about 15 minutes before baking.
