Instructions
- Prepare the sweet potatoes: Peel and dice sweet potatoes into bite-sized cubes. In a large skillet, heat olive oil over medium heat. Add the sweet potatoes, season with salt and black pepper, and cook until tender, about 10-15 minutes.

- Melt the cheese: Sprinkle shredded cheddar cheese over the top. Cover the skillet with a lid and let it sit on low heat for a few minutes until the cheese melts deliciously.
