Description
A classic and comforting banana bread made from ripe bananas, perfect for breakfast or snacks.

- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3 to 4 ripe bananas (mashed)
- 3/4 cup granulated sugar
- 2 large eggs
- 6 tablespoons unsalted butter (melted)
- 1/3 cup sour cream
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Grease an 8½ x 4½ inch loaf pan.
- In a medium bowl, whisk together the flour, baking soda, and salt until well combined.
- In a large mixing bowl, mash the ripe bananas with a fork until they’re slightly chunky.
- Stir in the sugar, eggs, melted butter, sour cream, and vanilla extract into the bananas until thoroughly blended.
- Gently fold in the dry ingredients from the medium bowl. Be careful not to overmix; a few lumps are perfectly fine!
- Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
- Bake in the preheated oven for about 50 to 60 minutes. Check with a toothpick; it should come out clean when the bread is done.
- Allow it to cool in the pan for 15 minutes before transferring it to a wire rack to cool completely.
Notes
For best results, use very ripe bananas. You can substitute sour cream with Greek yogurt or butter with coconut oil for variations.
