  • 3 to 4 ripe bananas (mashed)
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 6 tablespoons unsalted butter (melted)
  • 1/3 cup sour cream
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8½ x 4½ inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking soda, and salt until well combined.
  3. In a large mixing bowl, mash the ripe bananas with a fork until they’re slightly chunky.
  4. Stir in the sugar, eggs, melted butter, sour cream, and vanilla extract into the bananas until thoroughly blended.
  5. Gently fold in the dry ingredients from the medium bowl. Be careful not to overmix; a few lumps are perfectly fine!
  6. Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
  7. Bake in the preheated oven for about 50 to 60 minutes. Check with a toothpick; it should come out clean when the bread is done.
  8. Allow it to cool in the pan for 15 minutes before transferring it to a wire rack to cool completely.

Notes

For best results, use very ripe bananas. You can substitute sour cream with Greek yogurt or butter with coconut oil for variations.
