- 2 ripe bananas, mashed
- 1/2 cup milk
- 1/4 cup sugar
- 1/4 cup butter, melted
- 1 packet active dry yeast
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 2 1/2 to 3 cups all-purpose flour
- 1/2 cup brown sugar
- 2 teaspoons ground cinnamon
- 1/4 cup cream cheese
- 1 cup powdered sugar
- 2 tablespoons milk (for frosting)
Instructions
- In a large mixing bowl, combine the mashed bananas, milk, melted butter, sugar, vanilla extract, and salt.
- Sprinkle the yeast over your banana mixture and allow it to rest for about 5 minutes.
- Gradually mix in 2 1/2 cups of flour, stirring until you form a soft dough.
- Knead the dough on a floured surface until it’s smooth and elastic. Place it in a greased bowl, cover, and let it rise until doubled in size, about 1 hour.
- Once risen, punch down the dough gently and roll it out into a rectangle.
- Spread the rest of the melted butter over the dough, then sprinkle with brown sugar, cinnamon, and any additional banana slices if desired.
- Roll the dough tightly into a log and slice it into individual rolls.
- Arrange the rolls in a greased baking dish, cover again, and let them rise for another 30 minutes.
- Preheat your oven to 350°F (175°C) and bake the rolls for 20-25 minutes, or until they’re golden brown.
- For the frosting, mix together the cream cheese, powdered sugar, and milk until smooth and creamy.
- Drizzle the frosting generously over the warm rolls right before serving.
Notes
For best results, use very ripe bananas and ensure milk is at room temperature to activate the yeast. Store leftovers in an airtight container for up to 3 days or freeze for up to 3 months.
