A delightful mashup of banana bread and brownies, these Banana Bread Brownies are rich, moist, and incredibly easy to prepare.
Ingredients

- 1 cup (200 g) granulated sugar
- 1 cup (240 ml) sour cream (or plain Greek yogurt)
- ½ cup (113 g) unsalted butter, softened
- 2 large eggs
- 4 ripe bananas, mashed (about 2 cups)
- 2 teaspoons pure vanilla extract
- 2 cups (250 g) all-purpose flour
- 1 teaspoon baking soda
- ¾ teaspoon salt
- ½ cup (60 g) chopped walnuts (optional)
- ½ cup (113 g) unsalted butter (for frosting)
- 4 cups (480 g) powdered sugar
- 1½ teaspoons pure vanilla extract (for frosting)
- 3 tablespoons milk (more if needed for spreading)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking dish, or line it with parchment paper.
- In a large bowl, cream the sugar, sour cream, and butter together until light and fluffy. Beat in eggs, mashed bananas, and vanilla until smooth.
- In another bowl, whisk together the flour, baking soda, and salt. Gradually mix this into the wet ingredients until just combined. Fold in walnuts if using.
- Pour the batter into the prepared pan and bake for 25-30 minutes, or until a toothpick comes out clean. Let cool in the pan.
- For the frosting, melt the butter in a saucepan over medium heat until golden brown. Remove from heat and whisk in powdered sugar, vanilla, and milk until smooth.
- Once brownies are cool, spread frosting over the top. Cut into squares and serve.
Notes
Store brownies in an airtight container for up to 3 days or in the fridge for a week. They can be frozen for up to three months.
