Ingredients

  • 1 cup (240 ml) sour cream (or plain Greek yogurt)
  • ½ cup (113 g) unsalted butter, softened
  • 2 large eggs
  • 4 ripe bananas, mashed (about 2 cups)
  • 2 teaspoons pure vanilla extract
  • 2 cups (250 g) all-purpose flour
  • 1 teaspoon baking soda
  • ¾ teaspoon salt
  • ½ cup (60 g) chopped walnuts (optional)
  • ½ cup (113 g) unsalted butter (for frosting)
  • 4 cups (480 g) powdered sugar
  • 1½ teaspoons pure vanilla extract (for frosting)
  • 3 tablespoons milk (more if needed for spreading)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking dish, or line it with parchment paper.
  2. In a large bowl, cream the sugar, sour cream, and butter together until light and fluffy. Beat in eggs, mashed bananas, and vanilla until smooth.
  3. In another bowl, whisk together the flour, baking soda, and salt. Gradually mix this into the wet ingredients until just combined. Fold in walnuts if using.
  4. Pour the batter into the prepared pan and bake for 25-30 minutes, or until a toothpick comes out clean. Let cool in the pan.
  5. For the frosting, melt the butter in a saucepan over medium heat until golden brown. Remove from heat and whisk in powdered sugar, vanilla, and milk until smooth.
  6. Once brownies are cool, spread frosting over the top. Cut into squares and serve.

Notes

Store brownies in an airtight container for up to 3 days or in the fridge for a week. They can be frozen for up to three months.
