- 200g feta cheese
- 4 eggs
- 1 cup cherry tomatoes
- 2 cups fresh spinach
- 2 tablespoons olive oil
- Salt and pepper, to taste
- Fresh herbs (optional, for garnish)
Instructions
- Preheat your oven to 375°F (190°C).
- In a baking dish, place the feta cheese prominently in the center.
- Surround the feta with cherry tomatoes and fresh spinach.
- Drizzle olive oil over the feta and vegetables, seasoning with salt and pepper.
- Create small wells in the veggie mixture and crack an egg into each well.
- Bake for about 20-25 minutes, or until the eggs are set to your preference.
- Once removed from the oven, garnish with fresh herbs if desired.
- Serve warm with a slice of crusty bread for dipping.
Notes
Leftovers can be stored in an airtight container in the fridge for up to 3 days. For freezing, cool completely before wrapping tightly and storing in a freezer-safe container for up to 2 months.
