Ingredients

  • 1 cup all-purpose flour

  • 1 teaspoon black pepper

  • 1/2 teaspoon smoked paprika (optional)
  • 2 large eggs, beaten
  • 1 1/2 cups panko breadcrumbs
  • 1/4 cup honey
  • 2 tablespoons hot sauce
  • 1 tablespoon unsalted butter
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 teaspoon apple cider vinegar or lemon juice (optional)
  • Fresh chopped parsley (for garnish)
  • Sesame seeds or crushed peanuts (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Pat the chicken dry with paper towels.
  3. In a shallow dish, combine flour, salt, pepper, garlic powder, onion powder, and smoked paprika.
  4. In another shallow dish, beat the eggs.
  5. In a third shallow dish, place the panko breadcrumbs.
  6. Coat each chicken piece first in the flour mixture, dip it in the egg, and then coat it with the panko breadcrumbs.
  7. Place the breaded chicken on the prepared baking sheet and lightly spray with cooking spray or drizzle with olive oil.
  8. Bake for 25-30 minutes until the chicken is cooked through and the crust is golden brown.
  9. Meanwhile, in a small saucepan, combine honey, hot sauce, butter, and red pepper flakes (if using) over medium heat until the butter is melted.
  10. Optionally add apple cider vinegar or lemon juice to the sauce.
  11. Drizzle the hot honey sauce over the baked chicken, garnish with parsley and sesame seeds or peanuts, and serve with sides.

Notes

For a gluten-free option, use gluten-free breadcrumbs and flour. Make sure to dry the chicken before coating for a crispier result.
