- 1 cup Spinach
- 1/2 cup Sun-Dried Tomatoes
Instructions
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, combine the cottage cheese, eggs, and Parmesan cheese.
- Stir in the chives, garlic powder, paprika, and season with salt and pepper.
- Fold in the bell peppers, spinach, and sun-dried tomatoes until well mixed.
- Pour the mixture into a greased baking dish, spreading it evenly.
- Bake for about 35-40 minutes or until the eggs are set and the top is golden brown.
- Allow it to cool slightly before serving.
Notes
For a creamier texture, use finely blended cottage cheese. Customize with additional veggies or different cheeses as desired.
