A simple and delicious Greek chicken souvlaki recipe, featuring marinated chicken, grilled vegetables, and warm pita, perfect for weeknight dinners.

- 1.5 lbs boneless, skinless chicken breasts, cut into 1–1½ inch pieces
- ¼ cup olive oil
- ¼ cup lemon juice (fresh is best)
- 4 cloves garlic, minced
- 1 tablespoon dried oregano (or 2 tbsp fresh, chopped)
- 1 teaspoon dried thyme (optional)
- Salt and freshly ground black pepper, to taste
- Mixed vegetables: red onion and bell peppers, cut into similar-sized pieces
- Wooden skewers (soaked) or metal skewers
Instructions
- Combine the marinade: In a large bowl, whisk together olive oil, lemon juice, minced garlic, oregano, thyme, salt, and pepper.
- Add chicken: Toss the chicken pieces into the marinade. Make sure every piece is coated.
- Chill to develop flavor: Cover and refrigerate for at least 1 hour; overnight is fine and gives the best flavor.
- Preheat the grill: Heat to medium-high (about 400–450°F / 200–230°C).
- Thread skewers: Alternate chicken with onion and bell pepper pieces on soaked wooden skewers.
- Grill: Place skewers on the preheated grill. Cook 8–10 minutes, turning occasionally.
- Check doneness: Chicken is safe at an internal temperature of 165°F (74°C).
- Rest briefly: Remove skewers and let rest for 3–5 minutes.
- Serve: Slide chicken off skewers or leave them whole, served immediately with warm pita and tzatziki.
Notes
For juicier results, substitute chicken breasts with thighs. Use half lemon juice and half white wine vinegar for brightness.
