- 1 lb chicken breast, diced
- 1 cup broccoli florets
- 1 cup bell pepper, sliced
- 1 cup carrots, julienned
- 1 cup cooked rice (white, brown, or cauliflower rice)
- 1/2 cup teriyaki sauce (store-bought or homemade)
- 2 tablespoons vegetable oil
- 1 tablespoon sesame seeds (for garnish)
- 2 green onions, sliced
Instructions
- Heat the oil: In a large skillet, add the vegetable oil and heat over medium heat.
- Cook the chicken: Add the diced chicken to the pan and cook for about 5-7 minutes until the chicken is browned and cooked through.
- Add veggies: Toss in the broccoli, bell pepper, and carrots. Stir-fry everything together for another 5 minutes until the vegetables are just tender.
- Make it saucy: Pour in the teriyaki sauce and stir well to coat the chicken and vegetables evenly. Let it cook for an additional 2 minutes to thicken slightly.
- Serve: Dish the mixture over the cooked rice and wow your guests with a sprinkle of sesame seeds and fresh green onions on top.
